What are "top of the line" spark plugs?

I don't think reading the temp at a cooler spot is really a solution to your heat question. 350 would not be an unreasonable head temp while running down the highway. That heat will be held for a while in the metal.
I just meant better spark plugs then what were in there , one step above platinum ( iridium ) and I believe I was pointing the thermometer right at the spark plug when I got the 350 reading because after changing the plugs and oils ( amsoil oil 20/50 ) in all 3 holes the temp has gone down and now is around 320 right at the plug with lower temps off to the side ( doing the same drive ) either way I feel a lot better after seeing what shape the old spark plugs were in and now seeing a lower temp on the heads but Next week I have love jugs cooling masters and a digital oil dipstick I will be installing just in case the engine does start to heat up and I will also be looking at a bigger better oil cooler I’m the future for added support in the fight against heat 😊
