Any seat that is narrower at the nose will help bring the inside of your legs closer to the tank (not further up). That will put your feet flatter to the ground.

LePera makes a variety of seats that do this. I have a Daytona on my Road Glide. Its what you describe but I don't know how it would look on the Ultra.

Corbins do also but cost a lot more.
For the most part Mustang seats are not set up that way.

On the lower end you could just go with the badlander seat from Harley but on an ultra it would look weak IMHO.
