This will be what i call "My" stage 1 build, it'll be in the bike [06 FXDI SuperGlide]for at least all of 2006 and maybe 07. by 07 i hope to have a TC124 ready for it.
i'm starting with 95" jugs 9.5-1cr, mild port & polish the heads. port match the intake, add roller rockers & rocker supports, SE211 cam & springs, adj. pushrods, SERT, SE clutch spring. K&N / SE AC with debaffeled & depluged stock pipes
i'll have the rev limter set for 6000, looking to make max hp at 5700- 5800 rpm.
will cast pistons live in there or am i gong to have to step up to forged?
if forged is the way to go, which brand?

Springer has some good links. Forged for the track, cast for the street. Unless the rpm's are expected to go above 6200, stick w/cast!

Who is doing your jug boring/head work?

Take their recommendations and ride the snot out of it.
