I bought a 2011 Fatboy last summer and I really like the bike except for the emblems on the gas tank. Can they be removed without screwing up the paint ?

Yeah...if you do a search this has been talked about. I usually guitar string or fishing line to get behind the adhesive tape...then degreaser or goof-off works good to remoev the leftover residue...some guys use heat guns too

I assume you're using nylon strings? My guitars are acoustic and use steel strings.. would hate to see what they would do to a tank.. I use dental floss.
