I would check the fault codes first as Kaz says, do this with any problem always. The flange problem is not easily reproduced at any fixed RPM level or gear selection. It can happen at lower RPM levels and I did notice it worst on part throttle situations. It actually stopped sputtering when wide open (lower AFR's and higher VE's on this situations I guess).
Everyone try this once

. On many occasions, all too frequent with the V-Rod, it just does not bother me, you'll find yourself very low on gas. If you crack it wide open

in first or second you may notice this cutoff effect. Only at peak hp & tq rpms on low gears when G's are best (pulling hard). I know about all the EFI system components and this should not happen but when I had your same problem I did reproduce it three or four times and it dissapeared after a fillup (yesss, I did not care if it leaned and broke, in the name of science, but it wasn't gonna, I swear

). When this happened I still had not replaced the damn flange flop thing but it was before the letter and the bike had no symptoms whatsoever. It was several month later that it started with the sputtering and the dealer war.
Experiment finished so I never tried it again. You shouldn't either unless you have a lot of money and/or another bike. I have other bikes but love my V-Rod. Not the fastest by any means but surely the best. Just think back and see if you were low on gas. I'm not saying it HAD TO BE what I'm suggesting (cause I know nothing), just a plausible explanation given what happened and what corrected it.
