Talking Flat Out Ignition Timing And Dtt Ignition

[FONT=Comic Sans MS] I was self tuning with my 95 inch S&S 79 cc heads, o.o30 Head gasket,
.585Gear S&S cams, V&H2>1Pro Pipe H.S. 45mm Mikuni, 98 needle,50 accelerator pump, 170 main,
measured compression is about 10.74 I am tuning the Dtt Ignition aroung 28 degrees total advance at 0 vacuum(flat out max). S&S suggested this as a max for thier "superstock" kit. Are they being conservative?
When going flat out wind noise drowns out preignition sounds and I am afraid of advancing more than 28 total. Would deadly piston preignition be heard above the wind noise?
By the way i have the the DTT ignition set at 1( No multi spark) 1 Advance 4 curve. No knocking unless under 3,000 rpm and turning the throttle more than a "Little bit"
