I seriously doubt the O2 sensors have anything to do with your problem, especially if the problem happens when the motor is cold. The computer ignores the O2 sensors when the motor is cold.
Also, I’m not sure how the o2 sensors make your motor hotter. That would suggest that your motor is running lean if it is too hot. Removing the O2’s won’t fix that. A better tune would help there.
I’d suggest diagnosing the problem instead of guessing. I’d start by getting a spark tester and making sure you have adequate spark (not just the existence of spark, but good spark) when the problem occurs. If the problem is the plugs not firing correctly, then look at the coil pack.
I don’t know if your bike has a Schrader valve or similar to check for fuel pressure, but your fuel pump could be getting weak and not providing enough fuel and/or fuel pressure. See if you can hook up a fuel pressure gauge (available for rent at most auto parts stores) and check for proper fuel pressure.
