Just did a search for gel fabric, and found a co that also sells neoprene, like wet suits. That's closed-cell foam, where the air trapped in each cell can't escape when you compress it. How does that differ from gel? Can gel move around inside the fabric? Do the edges of gel fabric need to be sealed to keep the gel inside?
Based on these ?, might you be better off trying to use neoprene, which you can cut to size and shape to fit your seat?
Whatever happens, please keep me posted, as I too would like to do what you are trying.
