1000 mile service
If you look at this list, it all looks pretty straight forward if you have the service manual. But what are considered the critical fasteners that need to be torqued.
FIRST SERVICE INTERVAL - 1,000 Mile Checkup
# Inspect air cleaner and service as required.
# Inspect brake fluid level and condition.
# Inspect brake pads and discs for wear.
# Adjust the clutch.
# Inspect and lubricate control cables.
# Inspect drive belt and sprockets. Adjust drive belt deflection if necessary.
# Inspect electrical equipment and switch operation.
# Replace oil filter and oil.
# Inspect engine idle speed.
# Inspect enrichener operation.
# Inspect fuel lines, fuel fittings, and fuel supply valves for leaks.
# Lubricate jiffy stand.
# Adjust primary chain.
# Replace primary fluid and inspect fluid and drain plug.
# Inspect spark plugs.
# Inspect and service Springer fork rocker bearings.
# Adjust and lube steering head bearings.
# Inspect throttle operation.
# Set tire pressure and inspect tire for damage.
# Replace and inspect transmission fluid.
# Inspect wheel spoke tightness.
# Inspect oil and brake lines for leaks.
# Torque all critical fasteners.
# Road test.

There are quite a few other things besides engine mounts. There is a section in the service manual for just this subject

Most things on motorcycles are either aluminum or plastic. It's a good Idea to buy a torque wrench for the applications..

The service manual , at least the '08 flh service manual, lists the critical fasteners in Section 1.

yep, service manual lists them but here's some:
- engine mounts
- frame bolts - i think there are 3 on each side.
- brake caliper bolts
- rotor bolts
- bolts that keep your hand controls in place and switch covers
- rear axle
- front axle
That's most of them that i can recall

Why?
take it to the dealer, have some coffee, get your HD serviced and leave.
If Paid $25K fpr the bike, why do I care about a $300 oil change?

If I can do it and save the $300 and also get more personal with my bike that is a huge reason. No one takes care of your property like yourself, and a dealer is no different.

Why? because i don't trust them to do the job right. Not to mention i can do it myself for $30.

I can't afford the prices they charge. To change all fluids W/gasket and o-rings about $60.00 .... The only good reason I don't mind taking bike in like for warranty work is they clean the bike real good. I can't seem to do it as well.. Good Luck

That reminds me of one time when I had work done to my scoot at a dealer. When I was looking over the work that was done, the service manager came out and told one of the techs, "We're not finished with this bike until it's clean. Have it cleaned up before Mr. WXYZ takes it home." The next thing I saw was some kid wiping down my vivid black Road King with a mechanic's rag and a bucket of dirty water. 
Don't ask me why I think I'm more qualified to do my own service work.

At 1000 miles I would leave nothing untouched. I raced for many years and am in the habit of checking everything when servicing. I don't trust anyone else with this responsibility and I'm fortunate to have the tools and know-how to do it.
Of the two dealers in my area, one shouldn't be trusted with anything (particularly with working on your bike) and the other only with warranty work (and you should double-check that).

$300 oil change more than the bike better get serviced.
