Getting ready to do the 20k mile service on my '03 FXDWG. I see in the owner's manual service interval table:

Repack rear fork bearings (If applicable) at 20k miles.

In the service manual, I don't see anything about it. Does this need to be done on the '03 Wide Glide?

The 2005 Service Manual says to lubricate the rear fork bearings every 30,000 miles (48,000 km). This is in the "Maintenance Schedule" section, Table 1-1. at the front of the Service Manual.
