Your dealer is full of it. Last 5 bikes... '86 FXR, '96 Road King, 2000, '05 and '07 Ultras.... changed oil at 2500 miles when using H-D dino oil, 5k changes using synthetic. Never, EVER have I had to add oil between changes. On a 5000 mile change I may have been down almost 1/2 qt, probably less.
The exception was the '05 Ultra. At around 7500 miles it started using a qt or more per 1000 miles. I sniffed around and did my homework first and discovered a Technical Service Bulletin indicated a change in the '05 valve seals due to consumption issues. The TSB indicated that dealers should inform customers that 1 qt per 1000 miles was not excessive. So naturally, when I went to my dealer with TSB in hand I made sure I told them I was using more than 1 qt/1000. Although the tech tip indicated the dealer should do a change and mark the dipstick and monitor it and go through all kinds of stuff to save the MoCo some warranty claims. My Service Manager thought it was a bunch of hogwash and just changed out the valve seals to the updated replacements. End of problem.
I can't imagine the stuff many folks had to go through if they didn't have a top-notch dealer. I'd suggest a call to Customer Service if your dealer continues to feed you the company line. A qt per 1000 miles might be normal on a car with 80 - 100,000 miles on it or a bike with high miles that's been beat. But in the first 1000 miles on a new bike, NO WAY!
You might want to sniff around on the CVO Forum and see what folks running those bikes have to say. There's a lot of gripes on those 110s.
